Cauliflower Mash

Ingredients:

2 heads cauliflower

3 tablespoons olive oil

3/4 cup milk or milk alternative

1 teaspoon nutmeg, freshly ground

3 cloves garlic, minced

1/2 teaspoon salt

freshly ground black pepper

Preparation:

Loosely separate each head of cauliflower into 5-6 sections and steam until tender. Place cooked cauliflower in food processor with the rest of ingredients until it reaches similar texture to mashed potatoes.
